Day 22: Basilicious Chicken

When I first saw this recipe I instantly thought of my wonderful mother's fresh basil and how awesome this would be with it as the main ingredient. It turns out I was right on the money! Here is the skinny:

Ingredients
6 oz of chicken breast
1/3 cup of chopped up FRESH basil
1 tbsp of dijon mustard

Instructions:
Cook the chicken on the skillet. Once chicken is cooked, put the dijon mustard on top of chicken and place basil on top!

Yes it is that easy and very delicious!

6 oz chicken= 6 PP!!


I added these FABULOUS Alexia Harvest Medley potatoes! These puppies are excellent and are only 2PP per 3 oz! I went ahead and had 6 oz so that is how much is pictures! 
Entire Meal: 12 PP!!!! LOVE IT!

The Skinny Saturdays has continued...

I haven;t been able to make it to good ole WW in about 2 weeks because I have been out of town so I was nervous anxious excited to return back and get weighed in. I knew it I had 1 more pound to lose to reach an even 30 pounds! I thought I would be able to lose this 1 pound since it has come off pretty easily since January....AND I didn't listen to my voice of reason saying: don't get your hopes up too much you did eat out more in June that you have January, February and March COMBINED!!! So I hoped on the scale....took a deep breath and waited for the lovely WW leader Neida to say: You have lost....

.6 pounds! Good job!

My first reaction was a little bittersweet...I am kinda hard on my self but when I took a step back I was like...this is pretty good. It is a tad more than half a pound! That is pretty fantastic and overall I am happy! I am also determined to lose at least .4 pounds by Saturday. What a better way to start my Holiday weekend than the feeling of loosing 30 pounds! I can't believe it....I might have to treat myself to a new bathing suit since I haven't "treated myself" to anything since I lost 20 pounds! (My husband would beg to differ:)

**Wish this was true for me but several people have made it a point to tell me they are happy I am losing weight because I was turning into a "chunkster"**

Day 21: Balsamic BBQ Chicken

I have been really enjoying the chicken trios. I love these babies for several reasons: cheap grocery bills, quick prep time and DELICIOUS MEALS!  I have also been able to take advantage of really tasting the different ingredients that I normally wouldn't 'savor' during a meal.  The balsamic taste on this chicken was awesome and I highly recommend it. Here is the skinny: \

Ingredients:
6 oz of chicken
1 Tbsp BBQ Sauce with less that 45 calories
1Tbsp Balsamic vinegar

Instructions:
1. Cook chicken in skillet until fully cooked (about 15 minutes)
2. Combine balsamic vinegar and bbq in a small bowl
3. Once the chicken is cooked, spread mixture on top of the chicken. Cook for about 2 minutes and flip the chicken and cook for about 5 minutes.
4. Serve on plate and put access mixture on top of chicken.
ENJOY!
1 Chicken Breast: 7 PP
 This whole dinner was only 10 PP AND it took 30 minutes to make.
The Uncle Ben's 90 second rice has become a hit in our house! There are so many flavors and it only takes 90 seconds to make! LOVE IT!

UMM Hello...welcome to the conversation

I was taking a break today and ventured to my favorite news outlet: YAHOO!:) They have something for everyone and make for the perfect landing page for someone looking for SOMETHING interesting to take her my mind off numbers:/  Today I cam across this great good article: check it out here!


While it is a great reminder of some helpful tips on loosing weight it is kinda repetitive considering this is the basis of what Weight Watchers is and why it is so amazing. Everyday when I log on to track my delicious oatmeal or the sunflower seeds that I have become slightly addictive to, I see little articles and daily reminders of these helpful hints. The reason I personally love Weight Watchers is because it's REALLY not a diet.  WW teaches you portion control and healthy eating, with an emphasis on filling your belly with healthy foods, rather than junk.


When I clicked on the link, I expected to find something that I didn't know and spent the entire article thinking: "Didn't I read that on WW"...after about 5-10 sentences I realized: this is what makes WW so successful! While I haven't been writing and sharing recipes as much as I should, I have been sticking to making better health choices and was pleasantly surprised that when I went to a bachelorette party this weekend that is wasn't filled with junk food and food that I would regret eating. In fact it was just the opposite! I got to snack and not worry about feeling guilty! I even found a new snack that I will picking up on the next HEB trip! 


So thank you Yahoo! for once again providing me with a quick reminder of how WW is and welcome to the conversation on how to lose weight, make good choices and look good in the bathing suit that I will be living in now since it is Summer AND TEXAS!

Day 20: Naked Chicken Parm

This week for our dinners I decided to try HUngry Girl Chicken Trios. As mentioned previously mentioned these are great dinners for Thursday or Friday because they are very easy to make. I also learned when you plan your main meals with less that 12 ingredients FOR THE ENTIRE week, it makes the grocery bill $80 less than normal:)  Now thats a bandwagon I could jump on:)
Here is the skinny:

Ingredients: 
5 oz chicken breast
1 WW string cheese
1/4 cup LF marinara sauce

Instructions: 
Cook chicken breast in skillet until fully cooked. Meanwhile, chop string cheese until it is cut into little pieces. I found using a food processor works great!

Once chicken is cooked put marinara sauce  and then cheese on top of chicken.  Cover and cook until cheese is melted and enjoy- 1 chicken breast- 8 PP


I also added 2 oz of this awesome pasta I got this weekend at the Lavendar Festival in Blanco, Tx. It is VERY GOOD for what is considered a "healthy" pasta! 4 PP for 2 oz:)

Total Meal: 12 PP

Still alive and STILL making better choices:)

I AM BACK!!!! I know I have not been blogging in about 2-3 weeks! I have been busy with work and traveling for work but it is no excuse. I have't stopped eating healthy and still kicking butt. I haven't made it to WW in 2 weeks but I am still -29 pounds down and it feels great. I am more than half way to my goal!  I am back to sharing the wonderful recipes that I have been cooking:)
