Day 22: Basilicious Chicken

When I first saw this recipe I instantly thought of my wonderful mother's fresh basil and how awesome this would be with it as the main ingredient. It turns out I was right on the money! Here is the skinny:

Ingredients
6 oz of chicken breast
1/3 cup of chopped up FRESH basil
1 tbsp of dijon mustard

Instructions:
Cook the chicken on the skillet. Once chicken is cooked, put the dijon mustard on top of chicken and place basil on top!

Yes it is that easy and very delicious!

6 oz chicken= 6 PP!!


I added these FABULOUS Alexia Harvest Medley potatoes! These puppies are excellent and are only 2PP per 3 oz! I went ahead and had 6 oz so that is how much is pictures! 
Entire Meal: 12 PP!!!! LOVE IT!

Day 21: Balsamic BBQ Chicken

I have been really enjoying the chicken trios. I love these babies for several reasons: cheap grocery bills, quick prep time and DELICIOUS MEALS!  I have also been able to take advantage of really tasting the different ingredients that I normally wouldn't 'savor' during a meal.  The balsamic taste on this chicken was awesome and I highly recommend it. Here is the skinny: \

Ingredients:
6 oz of chicken
1 Tbsp BBQ Sauce with less that 45 calories
1Tbsp Balsamic vinegar

Instructions:
1. Cook chicken in skillet until fully cooked (about 15 minutes)
2. Combine balsamic vinegar and bbq in a small bowl
3. Once the chicken is cooked, spread mixture on top of the chicken. Cook for about 2 minutes and flip the chicken and cook for about 5 minutes.
4. Serve on plate and put access mixture on top of chicken.
ENJOY!
1 Chicken Breast: 7 PP
 This whole dinner was only 10 PP AND it took 30 minutes to make.
The Uncle Ben's 90 second rice has become a hit in our house! There are so many flavors and it only takes 90 seconds to make! LOVE IT!

Day 20: Naked Chicken Parm

This week for our dinners I decided to try HUngry Girl Chicken Trios. As mentioned previously mentioned these are great dinners for Thursday or Friday because they are very easy to make. I also learned when you plan your main meals with less that 12 ingredients FOR THE ENTIRE week, it makes the grocery bill $80 less than normal:)  Now thats a bandwagon I could jump on:)
Here is the skinny:

Ingredients: 
5 oz chicken breast
1 WW string cheese
1/4 cup LF marinara sauce

Instructions: 
Cook chicken breast in skillet until fully cooked. Meanwhile, chop string cheese until it is cut into little pieces. I found using a food processor works great!

Once chicken is cooked put marinara sauce  and then cheese on top of chicken.  Cover and cook until cheese is melted and enjoy- 1 chicken breast- 8 PP


I also added 2 oz of this awesome pasta I got this weekend at the Lavendar Festival in Blanco, Tx. It is VERY GOOD for what is considered a "healthy" pasta! 4 PP for 2 oz:)

Total Meal: 12 PP

Day 19: Crispy Nacho Chicken

I love love love easy to cook meals on Thursdays! It encourages me to cook dinner instead of going out to eat since isn't going to be hard since i planned ahead! As I have mentioned before, Hungry Girl has a section of the book dedicated to the "trios".  When I am making my list for the week I tend to plan these meals towards the end of the week:)   I made this "nacho chicken" and it was surprisingly easy and combines some our Mexican food favorites: chips and salsa! Here is the skinny:

Ingredients
5 oz chicken breast

1/4 cup of salsa

8 baked tortilla chips

Instructions

Preheat oven to 350 degrees

Place the tortilla chips in ziplock bags and smash into little pieces

Take salsa and pour on top of chicken

Put the tortilla chips on top of the salsa and use a spoon to press the tortilla chips into the chicken

Bake in Oven for about 25-30 minutes and Enjoy! OLE!

Day 18: Exploding Chicken Taquitos

Who hasn't been to a party and had those fabulous full of flavor fat! But of course we eat them and love them. We go to the store and buy some and indulge some more:) Well I have a solution for you! I made these babies fora  Cinco de Mayo party at my office. They were a big hit!


Ingredients:
8 small (6-inch) yellow corn tortillas
9 oz of chicken breast shredded
1/2 cup salsa
1/3 cup shredded fat-free cheddar cheese
1/4 tsp. dry taco seasoning mix
Optional: red enchilada sauce, additional salsa, fat-free sour cream, for dipping


Directions:
Preheat oven to 375 degrees.

In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.

Remove chicken mixture from the fridge, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.

Prepare a baking sheet by spraying with nonstick spray, and set it aside.

Dampen two paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.

Take one tortilla (keep the rest between the paper towels), spray both sides lightly with nonstick spray, and lay it flat on a clean dry surface. Spoon about 2 heaping tbsp. of filling onto the tortilla. Spread it evenly across the entire surface, and roll tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.

Bake for 14 - 16 minutes, until crispy. Allow taquitos to cool for 5 minutes. If you like, dunk in enchilada sauce, salsa, or sour cream!

Day 17: Crock-Pot Cinna-Apples 'n Oats

Happy Cinco de Mayo! Last night while I was preparing another recipe (which I will post later) I had some time to kill and started looking through the cookbook. I came across a recipe that I had been wanting to try but never thought I had the time to prepare this. I also was waiting for when I had guests but I decided what the heck and started looking for the ingredients:) Turns out this was not hard to make and made it in about 15 minutes and woke up to a FABULOUS smelling house. You get a HUGE portion serving.  Here is the skinny: 




Ingredients:
8 cups chopped Fuji apples (about 6 apples)
2 tbsp. brown sugar (not packed), divided
1 1/2 tsp. cinnamon, divided
1 1/2 cups old-fashioned oats
1 cup light vanilla soymilk
1/3 cup sugar-free pancake syrup
1/2 tsp. salt
2 tbsp. light whipped butter or light buttery spread


Directions:
In a large bowl, mix apples with 1 tbsp. brown sugar and 1/2 tsp. cinnamon. Stir to coat apples well. Transfer to the crock pot.

In the empty bowl, combine oats, soymilk, 1 tbsp. brown sugar, 1 tsp. cinnamon, syrup, and salt. (All remaining ingredients except butter.) Add 1 cup water and mix well.

Add oat mixture to the crock pot, and gently stir. Cover and cook on high for 3 hours or on low for 7 hours.

Add butter and mix well. (Do NOT forget this step. Stick a Post-it to your timer if you have to!)

Day 16: Buffalo Chicken Wing Macaroni and Cheese



    As mentioned in various posts, one of my favorite foods is Buffalo Wings:) I found this recipe for Buffalo Chicken wing Macaroni and Cheese! Here are the details: 
      Ingredients 
      4 1/2 ounces (about 1 cup) uncooked elbow macaroni with at least 2g fiber per 2-ounce serving 
      2 stalks celery, chopped 2 medium carrots, chopped 
      1 small onion, chopped 
      8 ounces cooked and shredded skinless lean chicken breast 1 teaspoon chopped garlic 1
      /4 cup Frank's RedHot Original Cayenne Pepper Sauce, divided
      1/2 cup fat-free sour cream
      2 wedges The Laughing Cow Light Creamy Swiss cheese 
      2 teaspoons yellow mustard 
      1 1/2 tablespoons reduced-fat Parmesan-style grated topping 
      1 tablespoon chopped fresh parsley


    Instructions
    Preheat oven to 350 degrees.

    Cook pasta al dente in a medium-large pot. (Refer to package instructions for exact time.) Drain and set aside.

    Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add celery, carrots, and onion. Stirring occasionally, cook until veggies have slightly softened, about 5 minutes.

    Add 
    chicken, garlic, and 3 tablespoons hot sauce to the skillet. Mix thoroughly and set aside.

    In a microwave-safe bowl, combine sour cream, cheese wedges, mustard, and remaining 1 tablespoon hot sauce. Mix well and heat in the microwave for 30 seconds.

    Spray an 8-inch by 8-inch baking pan with nonstick spray. Evenly place half of the pasta into the pan. Evenly top with chicken-veggie mixture followed by the remaining pasta.

    Add the sour cream mixture to the pan in an even layer. Sprinkle with Parm-style topping and parsley.

    Bake in the oven until hot and bubbly, about 30 minutes.

    Serve and enjoy!

    Makes 4 servings

    1 serving: 5 PP






    While this was good it was nothing like eating WINGS or MAC and CHeese but it was the perfect substitute! I have learned that when dealing with Mac and Cheese the likelihood of it tasting healthy is pretty high.  This was one of the first Hungry Girl recipes that I felt was "healthy". My wonderful husband loved it but at this point (we are about to hit our 1 year anniversary) he has learned to always say he likes what i make:) I liked this recipe but did not LOVE it. You win some and loose some however, I would say this was a tie:)

    Day15: Sweet n' Spicy Chicken Lettuce Wraps

    One of my favorite dishes at my favorite restaurant are the veggie lettuce wraps from PF Changs.  I tried to recreate once and it was a DISASTER!  I found this recipe for lettuce cups and thought to give it a whirl. While it tasted nothing like PF Changs but it was equally as fabulous! Here is the skinny:

    Ingredients
    3 oz of chicken breast cut in chunks
    2 tbsp of Asian Sweet Chili
    2 Lettuce cups

    Instructions
    Cook chicken until brown and cooked thoroughly

    Place chicken in bowl and toss to coat

    Divide evenly between 2 lettuce cups

    Enjoy!

    Day 14: Flat-tastic Ranchy Bacon Wrap

    "Avacado with Mexican food and ranch on chicken wraps these are a few of my favorite things!"  As anyone can clearly see, I LOVE mexican food.  I have blogged many recipes such as: Twice-As- Nice- Guapo Tacos, Nacho-rific Stuffed Chicken, Neato- Chili Frito Burrito,  Jalepeno Poppers and my favorite Cheesy Chicken Enchiladas! Last night was no exception. This recipe did not disappoint and highly recommended by me and my wonderfully hungry husband:) Here is the skinny:


    Ingredients: 
    1 tbsp. fat-free ranch dressing 
    1 tbsp. mashed avocado 
    2 oz. cooked skinless lean chicken breast, chopped 
    1/4 cup shredded lettuce 
    2 tbsp. chopped tomato 
    1 tbsp. precooked real crumbled bacon (likethe kind by Oscar Mayer) 
    1 La Tortilla Factory Smart & Delicious Low Carb/High Fiber Large Tortilla 

    Directions: 
    To make the filling, combine dressing with avocado in a bowl and mix well. Add all other ingredients except the tortilla. Toss to coat. 

    Lay tortilla flat on a clean, dry surface. Spoon filling onto the center. Carefully fold the tortilla sides toward the center, followed by the top and bottom, overlapping to enclose the filling and form a square. Press gently to seal.

    Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place the wrap in the skillet, seam side down, and cook for 3 - 4 minutes. Gently flip and cook for an additional 2 - 3 minutes, until lightly browned.

    Slice in half diagonally or just bite right in.

    Day 13: Lasagna Cupcakes

    Tonight  I made LASAGNA CUPCAKES...come again? I know it sounds weird but they were delightfully delicious! I was also unsure about the wonton wrappers but as many Hungry Girl recipes I trust that it will be great and this was no exception! Here is the skinny:


    Ingredients
    12 oz. raw lean ground beef
    1/4 tsp. salt, divided
    1/8 tsp. black pepper
    1 cup chopped onion
    1/2 cup chopped mushrooms
    One 14.5-oz. can crushed tomatoes 
    1 1/2 tsp. chopped garlic, divided
    1/2 tsp. Italian seasoning
    One 10-oz. package frozen chopped spinach, thawed and squeezed dry 
    1 1/2 cups fat-free ricotta cheese
    1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
    1/8 tsp. ground nutmeg
    24 small square wonton wrappers (often stocked with the tofu in the refrigerated section of the supermarket)
    1 1/2 cups shredded part-skim mozzarella cheese 


    Instructions
    Preheat oven to 375 degrees.

    Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add turkey and season with 1/8 tsp. salt and pepper. Cook and crumble until no longer pink, about 5 minutes. Add onion and mushrooms and, stirring often, cook until veggies are soft and turkey is fully cooked, about 6 minutes.

    Reduce heat to low. Add crushed tomatoes, 1 tsp. garlic, and Italian seasoning to the skillet. Stirring occasionally, simmer for 10 minutes. Set aside.

    Meanwhile, in a bowl, combine spinach, ricotta cheese, egg substitute, nutmeg, remaining 1/8 tsp. salt, and remaining 1/2 tsp. garlic. Mix well and set aside. Spray a 12-cup muffin pan with nonstick spray. Press a wonton wrapper into the bottom and up along the sides of each cup of the pan. Evenly distribute about half of the spinach-ricotta mixture among the cups, smoothing the surfaces with the back of a spoon.

    Evenly distribute about half of the turkey mixture among the cups, smoothing the surfaces with the back of a spoon. Top each turkey layer with 1 tbsp. mozzarella cheese. Place another wonton wrapper into each cup, lightly pressing it down on the cheese layer and along the sides of the cup, letting the edges fall over the pan. Repeat layering by evenly distributing remaining spinach-ricotta mixture and turkey mixture among the cups. Top each cup with 1 tbsp. mozzarella cheese.

    Bake in the oven until cheese has melted and wrapper edges are browned, about 10 minutes.

    Allow to cool, carefully transfer to a plate and enjoy!

    Day 12: HG's Crispity Crunchity Drumsticks

    Monday Madness was in ful affect! We had such a fun and enjoyable weekend and Monday just came in an took away our happiness...not really. But we still enjoyed some good ole'  "fried" chicken! It was literally finger licken good! Here is the skinny: 


    Ingredients
    6 raw chicken drumsticks, skin removed 
    1/2 tsp. salt, divided 
    1/2 cup Fiber One bran cereal (original)
    1 1/4 tsp. black pepper 
    3/4 tsp. garlic powder 
    3/4 tsp. onion powder 
    3/4 tsp. dried oregano 
    1/4 tsp. chili powder 
    1/4 cup fat-free liquid egg substitute (likeEgg Beaters Original) 
    Optional: additional seasonings, to taste


    Ingrediants
    Preheat oven to 400 degrees. 

    Spray a baking sheet with nonstick spray and set aside. Season chicken with 1/4 tsp. salt and set aside. 

    Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Transfer crumbs to a large sealable plastic bag. Add remaining 1/4 tsp. salt and all other seasonings. Seal bag and shake to mix. Open bag and, if you like, season crumbs to taste with additional seasonings. Set aside.

    Place egg substitute in a wide bowl. Two at a time, coat drumsticks in egg substitute, gently shake to remove excess liquid and place in the bag with the crumbs. Seal and shake to coat. Transfer crumb-coated drumsticks to the baking sheet and repeat with remaining drumsticks. 

    Bake in the oven for 20 minutes and then carefully flip. Bake for another 15 - 20 minutes, until crispy and cooked through. 



    2 Drumsticks: 5 PP

    We had this with some roasted chicken rice and green beans: 
    Roasted chicken Rice: 1/2 cup- 3 PP
    Green Beans: 1 cup- 0 PP

    TOTAL: 8 PP (for dinner that left me with plenty for delicious desert!!)

    My honey loved loved loved this! He said it tasted better than any fast food restaurant! EAT YOUR HEART OUT KFC!

    Day 11: Pizza Puffs

    On Friday, we had our typical Pizza Night! It has been fun finding different and creative ways of having one of our favorite foods.  So far we have found one we didn't like! Here is the skinny:

    Ingredients
    1/2 C chopped mushrooms
    1/2 C chopped onion
    1/2 C chopped green pepper
    17 pieces of turkey perpperoni
    2 sticks of light string cheese
    1 roll of reduced fat of crescent
    1 1/2 tsp Italian Seasoning
    1/8 tsp onion powder
    1/8 tsp garlic powder
    1 tbsp reduced- fat parmesan-style grated topping

    Instructions
    Bring skillet ,sprayed with nonstick spray. to medium heat on the stove. Add the veggies, stirring and cooking until slightly tender.

    Break cheese into thirds and place in blender and blend at high speed until cheese takes on shredded consistency. Set aside.

    Combine Italian seasoning, onion & garlic powder and parmesan cheese

    Roll out dough and cut into 6 squares.

    Evenly distribute about TBSP of veggies  and pinch together the corners, pressing firmly and form round "pizza puffs".  Evenly place on baking sheet seams down.

    Mist the puffs with nonstick spray and sprinkle seasoning mix.

    Bake in the oven for 12 minutes for brown on top.

    1 Pizza Puff: 4 PP

    These tasted like a supreme pizza in a LARGE puff. It was great!

    Day 10: Bacon Wrapped Bar-B-Que Chicken

    Last Thursday I decided to choose a recipe from the "Chicken Trios" section. I love this section because it consists of 3 ingredients.  Not only was this great but it would be great while being poolside but it is EASY:) Here is the skinny:

    Ingredients
    1 five oz of chicken breast
    2 slices of center cut bacon
    2 tbsp of BBQ sauce with less than 60 calories

    Instructions:
    Preheat oven to 350 degrees

    Put BBQ sauce all over the chicken

    Wrap bacon around chicken and secure with toothpicks

    Cook for 35 minutes

    SERVE and enjoy!
    1 Chicken Breast: 6 PP



    This baby was sooo easy to make that I didn't even have to look at the cook book as I typed that. That is why I love Hungry Girl.

    Day 9: Twice-As-Nice Guapo Taco

    Tonight was TACO Tuesday tonight at the Roberts' house! My husband thought it was going to boring taco night...he even brought out the ranch because in his words: " I wasn't sure if it was going to be good or not!" Has he not been eating these other amazing meals! (To his defense he has never been a fan of taco night:) Here is the skinny:
    Day 9: Twice-As-Guapo Taco (pg. 346 in Hungry-Girls 300 for 300)
    Ingredients
    1/4 cup of lean ground beef (we use 96/4)
    1/8 tsp of taco seasoning
    2 tbsp of FF refried beans
    1 medium small/high fiber tortilla with less than 80 calories
    1 corn taco shell
    1/2 cup of shredded lettuce
    1 tbsp of cheese ( I didn't even use cheese:)

    Instructions 
    Cook the meet and sprinkle the taco seasoning  over the meat and cook until mean is done

    In a small bowl nuke the beans until hot, about 15 seconds.

    Nuke the tortilla in the microwave until warm, about 10 seconds

    Spread the beans evenly over the exposed side of the tortilla, set aside

    Warm shell in the over according the directions on the box.  LIne up the shell's bottom wtht he tortilla's center, and align the right side of the shell with the right side of the tortilla

    Gently press on the inside of the shell's right side to seal. Pick up the entire right half of the taco-tortilla and align the left side.  Gently press to secure.

    Fill shell with HB meat, lettuce, tomatoes and onions.   AND ENJOY THE GOODNESS

    1 Taco: 5 PP



    I had a 1/2 of cup of this Uncle Ben's 90 second Spanish rice for 3 points .


    This whole meal was 13 PP!!!

    Overall, this was a perfect Taco Tuesday. I didn't even notice the ranch until I was cleaning up. I asked my husband why he brought it out. He admitted he had been wrong and didn't know why he doubted my cooking and the fabulous 100 days of Hungry Girl! OLE!

    Day 8: Not so Sloppy Joes

    A couple of weeks ago I posted this recipe: Not-So-Sloppy-Joes Yummo .  IT was great but it was before I started doing 100 days of Hungry Girl!This dinner turned into great lunch left overs so I decided to include it in the 100 days of HUngry Girl!  It was just as great as the first time! Here is the skinny: 


    Ingredients 
    1 pound of lean ground meat
    1 can of Hunt Manwhich sauce
    1 package of Broccoli cole salw
    1/ tsp of salt and 1/ 8 tsp of pepper

    Instructions: 
    Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add turkey and season with 1/8 teaspoon salt and 1/8 teaspoon pepper. Cook and crumble until browned and fully cooked, about 8 minutes.
    Add slaw and sauce to the skillet and mix well. Stirring occasionally, continue to cook until sauce is hot and slaw has softened, about 6 minutes.
    Servings 4 (even though I think it is a tad more:) 1/2 cup of mixture per serving: 3PP per serving
    We used Nature's Own Sugar Free Hamburger Buns: 3 PP per bun
    I paired this with my new favorite: ALEXIA FRIES: 3 PP for 3 oz (which equals the same as a small fry at Whataburger and that is 13 PP! HOLY MOLY!)
    Total Meal: 9 PP and very filling:)

    Day 7: Three-Cheese Cannelloni

    I have never had a cannelloni before and man I was missing out. I have to admit that i thought this was some sort of pasta and was a little intimated by the fact that I thought I had to SUTFF pasta.  I don't know what I was thinking at the time but I am glad i was wrong. THIS CHICKEN was delightfully YUMMY! Here is the skinny: 


    Ingredients
    1/4 cup finely chopped mushrooms
    1/4 cup finely chopped spinach 
    1/3 cup FF ricotta cheese
    2 tsp of reduced fat parmesan cheese
    1 tsp chopped garlic
    dash ground nutmeg
    2 dashs of salt
    2 dashes of pepper
    1 1/2 pound of chicken
    3/4 cup of crushed tomatoes
    1 tsp of minced onion
    1/2 tsp italian seasoning
    1 stick of light cheese


    Instructions

    Preheat oven to 350 degrees.

    Place spinach and mushrooms in a microwave-safe bowl. Microwave for 1 minute, until softened. Blot thoroughly, removing excess liquid. Add ricotta cheese, Parm-style topping, 1/2 tsp. garlic, nutmeg, salt, and pepper. Mix well and set aside.

    Place one chicken cutlet in a large sealable plastic bag and, removing as much air as possible, seal bag. Carefully pound chicken through the bag with a meat mallet or heavy can, until uniformly about 1/3-inch thick. Repeat with second cutlet.

    Lay cutlets flat and spread evenly with veggie-cheese mixture. Starting with a longer side, roll up one cutlet (not too tightly or the filling will ooze!), and secure with toothpicks. Place in a baking pan sprayed with nonstick spray. Repeat with second cutlet. Cover pan with foil.

    Bake in the oven for 20 minutes.

    Meanwhile, in a small bowl, combine tomatoes, onion, Italian seasoning, and remaining 1/2 tsp. garlic. Mix well and set aside.

    Break string cheese into thirds and place in a food processor or blender -- blend at high speed until cheese takes on a shredded or grated consistency. (Or just tear string cheese into pieces and roughly chop.) Set aside.

    Remove pan from the oven, and carefully remove foil. Spoon seasoned tomatoes equally over chicken, and sprinkle shredded/grated string cheese evenly over tomatoes. Return to the oven (uncovered) and bake for 15 minutes, or until chicken is cooked through and cheese on top has melted. Remove toothpicks and enjoy!

    Day 6: Pepperoni Pizza Pinwheels

    My husband and I love pizza...I mean who doesn't?!?!!?  We would eat pizza at least 3-4 days a week but we want to be SKINNY:) I was really excited when I found these pepperoni pizza pinwheels for 3 PP a pinwheel!?! Here is the skinny:

    Ingredients
    2 wedges of Laughing Cow Cheese
    2 tbsp of sun dried tomatoes packed in oil, drained and finaly chopped
    1 Pillsbury Crescent Roll- reduced fat
    16 slices of Turkey Pepperoni
    1/2 tsp of Italian Seasoning
    1/4 tsp of garlic powder
    2 sticks of light string cheese pulled into strings

    Instructions
    Preheat oven to 305 degrees

    Spay Baking sheet with nonstick spray

    IN a bowl combine cheese wedges and sun dried tomatoes. Mix well and set aside

    Roll out the dough in a large rectangle.  Pinch the perforated edges together and roll with a rolling pin.

    Spread the cheese mixture evenly over the dough, leaving a 2 inch border of exposed dough along the right side only.

    Evenly distribute the pepperoni of the cheese and sprinkle the Italian seasoning.  Evenly place the string cheese vertically on the pizza.

    Starting with the left side roll the dough tightly up into a log and seal by pinching together the right edge and the roll itself.

    Using a sharp serrated knife, slice the log into 8 pinwheels and lay them flat on the baking sheet.  Bake for 18 minutes until lightly golden.

    Allow to cool and ENJOY!!

    Day 5: Pizzafied Grilled Cheese

    Who doesn't remember their mom cooking wonderfully delicious grilled cheese as a child. Unfortunately for my mom she had a bratty  picky little girl who didn't really like grilled cheese.  I didn't start eating grilled cheese until a couple years ago and boy did I feel like I had missed out after all these years. This combines pizza and grilled cheese...how can you get better than that!  Here are the details:

    Ingredients
    2 pieces of Italian Bread
    2 slices of American Cheese
    2 tbsp of crushed tomatoes
    1 tsp of italian seasoning
    4 pieces of Turkey Pepperoni
    Couple of sprays of Spray butter

    Instructions
    Spray a few sprays of spray butter on both side of both pieces of bread.

    Place one slice of cheese on the bread, the pepperoni slices on top of the cheese, tomato sauce, next the itialan seasoning and finally the 2nd peice of cheese.

    Set the stove to medium heat and toast until the cheese melts.

    Day 3: Neato-Chili Frito Burrito

    My husband bought a Frito Stuff Burrito from Sonic one time and I have to admit it looked tasty. I am a sucker for Fritos and chili! SO it was fantastic when I found this AWESOME recipe! Here are the details:

    Ingredients
    1/3 C of low-fat turkey or veggie chili
    1 medium- large high fiber flour tortilla with about 110 calories
    2 tablespoons with FF cheddar cheese
    10 Fritos

    Instructions
    Microwave chili for about 1 minute

    Microwave tortilla for about 10 seconds

    Spoon chili down the tortilla and cover with the cheese and then top with the fritos

    Wrap tortilla like a burrito  and place burrito seam side down on the plate and microwave until hot- about 30 seconds!

    ** When I was looking on WW online tools I saw that the SONIC burrito is 18 points and it is the same size...I think mine is WAY BETTER!**
