Chicken Enchilada Casserole

This weekend was full of 2 yummy dinners and 1 delicious breakfast! It is amazing how awesome these meals were and amazing low in points plus values. So let's begin: Saturday night I cooked a delightful dinner that I must admit I was a little weary when I started making it. SO my best advice is to cook it with skepticism and then when you are done, smile and think: WOW THIS WAS GREAT!!




Ingredients:
    One 9.75oz. (or 10oz.) can 98% fat-free chunk white chicken based in water, drained and flaked
    11 1/5 oz. of chicken breast, cooked and cut into chunks:) 
    One 10.75oz. can 98% fat-free cream of celery condensed soup 
    2/3 cup frozen bite-sized mixed veggies
    1/2 cup salsa Six 6-inch corn tortillas 
    1 cup shredded fat-free cheddar cheese, divided 
    Optional: salt and black pepper


Instructions


  1. Preheat oven to 350 degrees. 
  2.  In a large bowl, combine chicken, soup, veggies, and salsa. If you like, add salt and pepper. Mix well and set aside. 
  3. Spray a baking disk with nonstick spray. 
  4. Break tortillas in pieces about the size of tortilla chips. Lay half of the tortilla pieces along the bottom of the cooking dish.
  5. Evenly layer half of the chicken mixture over the tortilla pieces. 
  6. Sprinkle with 1/2 cup cheese. Lay remaining tortilla pieces over the cheese. Top evenly with the rest of the chicken mixture, followed by the remaining 1/2 cup cheese. Bake in the oven for 35 minutes, or until edges are brown and crispy. Allow to cool for about 5 minutes, until sauce thickens.
  7.  Eat up! Makes 4 servings.

Day 14: Flat-tastic Ranchy Bacon Wrap

"Avacado with Mexican food and ranch on chicken wraps these are a few of my favorite things!"  As anyone can clearly see, I LOVE mexican food.  I have blogged many recipes such as: Twice-As- Nice- Guapo Tacos, Nacho-rific Stuffed Chicken, Neato- Chili Frito Burrito,  Jalepeno Poppers and my favorite Cheesy Chicken Enchiladas! Last night was no exception. This recipe did not disappoint and highly recommended by me and my wonderfully hungry husband:) Here is the skinny:


Ingredients: 
1 tbsp. fat-free ranch dressing 
1 tbsp. mashed avocado 
2 oz. cooked skinless lean chicken breast, chopped 
1/4 cup shredded lettuce 
2 tbsp. chopped tomato 
1 tbsp. precooked real crumbled bacon (likethe kind by Oscar Mayer) 
1 La Tortilla Factory Smart & Delicious Low Carb/High Fiber Large Tortilla 

Directions: 
To make the filling, combine dressing with avocado in a bowl and mix well. Add all other ingredients except the tortilla. Toss to coat. 

Lay tortilla flat on a clean, dry surface. Spoon filling onto the center. Carefully fold the tortilla sides toward the center, followed by the top and bottom, overlapping to enclose the filling and form a square. Press gently to seal.

Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place the wrap in the skillet, seam side down, and cook for 3 - 4 minutes. Gently flip and cook for an additional 2 - 3 minutes, until lightly browned.

Slice in half diagonally or just bite right in.

Day 9: Twice-As-Nice Guapo Taco

Tonight was TACO Tuesday tonight at the Roberts' house! My husband thought it was going to boring taco night...he even brought out the ranch because in his words: " I wasn't sure if it was going to be good or not!" Has he not been eating these other amazing meals! (To his defense he has never been a fan of taco night:) Here is the skinny:
Day 9: Twice-As-Guapo Taco (pg. 346 in Hungry-Girls 300 for 300)
Ingredients
1/4 cup of lean ground beef (we use 96/4)
1/8 tsp of taco seasoning
2 tbsp of FF refried beans
1 medium small/high fiber tortilla with less than 80 calories
1 corn taco shell
1/2 cup of shredded lettuce
1 tbsp of cheese ( I didn't even use cheese:)

Instructions 
Cook the meet and sprinkle the taco seasoning  over the meat and cook until mean is done

In a small bowl nuke the beans until hot, about 15 seconds.

Nuke the tortilla in the microwave until warm, about 10 seconds

Spread the beans evenly over the exposed side of the tortilla, set aside

Warm shell in the over according the directions on the box.  LIne up the shell's bottom wtht he tortilla's center, and align the right side of the shell with the right side of the tortilla

Gently press on the inside of the shell's right side to seal. Pick up the entire right half of the taco-tortilla and align the left side.  Gently press to secure.

Fill shell with HB meat, lettuce, tomatoes and onions.   AND ENJOY THE GOODNESS

1 Taco: 5 PP



I had a 1/2 of cup of this Uncle Ben's 90 second Spanish rice for 3 points .


This whole meal was 13 PP!!!

Overall, this was a perfect Taco Tuesday. I didn't even notice the ranch until I was cleaning up. I asked my husband why he brought it out. He admitted he had been wrong and didn't know why he doubted my cooking and the fabulous 100 days of Hungry Girl! OLE!

Day 3: Neato-Chili Frito Burrito

My husband bought a Frito Stuff Burrito from Sonic one time and I have to admit it looked tasty. I am a sucker for Fritos and chili! SO it was fantastic when I found this AWESOME recipe! Here are the details:

Ingredients
1/3 C of low-fat turkey or veggie chili
1 medium- large high fiber flour tortilla with about 110 calories
2 tablespoons with FF cheddar cheese
10 Fritos

Instructions
Microwave chili for about 1 minute

Microwave tortilla for about 10 seconds

Spoon chili down the tortilla and cover with the cheese and then top with the fritos

Wrap tortilla like a burrito  and place burrito seam side down on the plate and microwave until hot- about 30 seconds!

ENJOY:

** When I was looking on WW online tools I saw that the SONIC burrito is 18 points and it is the same size...I think mine is WAY BETTER!**

Me Gusta Chicken Enchiladas

On of the first posts I wrote about was Cheesy Chicken
Enchiladas.

It is another favorite ours! Doesn't it look delish! Check the recipe out here: YUMMY:)

I usually eat 2 servings which comes out to 9 PP ( I love when it comes out that way!). Tonight we had some ranchero pinto beans! Those were 1/2 a cup for 3 PP.
Meal Total: 12 PP

Cheesy Chicken Enchiladas

When you live in Corpus Christi or Texas in general you know how awesome the Mexican Food is. You also know how much the tasty food can go straight to tummy or booty:) I was quite excited when I found this recipe.   Here you go!


Cheesy Chicken Enchiladas
1 spray of cooking spray
1/2 cup, fat free sour cream
8 oz, Reduced Fat Velveeta Light Cheese Product
2 cups, chopped roasted chicken breast
1/4 cup, low-fat shredded cheddar cheese
1/4 tsp, crushed red pepper flakes
1/4 cup, fat free evaporate milk
1/4 cup, scallions, green part only-minced
7 corn tortillas

Instructions
 Preheat oven to 350 degrees. Coast a 9-inch baking dish with cooking spray

In microwave safe bowl, combine cheese product and sour cream, cover and microwave on high power until cheese melts, about 1.5- 2 minutes. Remove half of melted cheese to small bowl and stir in evaporated milk; set aside.  Add scallions, red pepper flakes and chicken to remaining cheese mixture; stir to coat.

Spoon about 1/3 of cup(**see below**)of chicken mixture down center of each tortilla; fold in sides of tortilla to cover filling and place tortillas in single layer in prepared dish; spoon remaining cheese sauce over top and then sprinkle with shredded cheese.

Bake until cheese topping is bubbly, about 20 to 25 minutes.  Serve with salsa. Yields 1 enchilada per serving.

This has become one of my husbands favorites! I made it for friends the other night and it was a hit!

I found this recipe on WW online tools- FIND IT HERE and made modifications: corn instead of flour, no olives and only adding 1/3 of mixture. 2 servings of this is plenty for a dinner!
