It is a Skinny Saturday indeed!

Today was a great day at the Weigh In. I wasn't sure how much I was going to loose (if any).  Since i had such a big loss last week I was exactly how it would go.  All I was hoping for was just .5 pounds...1/2 of a pound.  I picked my mom up which was nice since had not gone together in a couple of weeks.  I stepped on the scale and closed my eyes...and then the lady made my day...she said: "You have lost....

1.6 pounds!!!

This was AMAZING NEWS as it brings me one step closer to loosing to my long term goal.  As of today I have lost:
20.8 pounds 
and I feel great and (my husband says I look pretty good too:)



To treat myself I bought a cute new bathing suit top and my awesome mom bought me a cover up:) Its off to get some sun (if the darn thing would come out and stay out!)  This is a great way to start my Saturday and enjoy my weekend!

Queen of the Castle Sliders and Sweet Potato Fries

Who doesn't love sliders! This fat girl does! But one thing that I don't like is the amount of fat and carbs they are loaded with. This was another fabulous recipe that I found on HungryGirl.com! Here are the details:

Ingredients
4 oz. raw extra-lean ground beef
2 slices of Italian bread
1/3 cup chopped onion
4 hamburger dill pickle chips
1/8 tsp. salt
1/8 tsp. onion powder
1/8 tsp. garlic powder
1/8 tsp. black pepper
Optional condiments: ketchup and mustard

Instructions

Combine beef and seasonings in a small bowl, and knead mixture by hand until integrated. Divide seasoned beef evenly into four balls. Flatten and form each ball into a square patty on a plate. Using a knife, make four small slits on the top of each patty. Place in the freezer for 5 minutes.

Bring a pan sprayed with nonstick spray to medium-high heat on the stove. Spread onion out on the pan. Place the patties on top of the onion, slit-side down, and cover the pan. Cook for 3 - 4 minutes (no flipping necessary), or until cooked through.

Meanwhile, cut each slice of bread into four squares, for a total of eight pieces. (If you like, slightly toast bread first.) Feel free to spread ketchup and/or mustard onto four pieces. Set aside.

Once patties are cooked through, scoop each one along with the onion beneath it onto one piece of bread. Top each with a pickle chip and then another bread piece (or the other way around, if you want to be fancy!). Let cool slightly, and then slide 'em into your mouth!

9 PP for sliders
4 PP for sweet potato fries
Total: 13 PP for an awesome dinner!

Skinny Saturday

Happy Skinny Saturday to each of you. I am about to get ready for m y weekly weigh in And I hope to see some great numbers! However, if nothing changes or even if I gained I know I tried my hardest and that's what counts. I even noticed that my cute husband is even loosing some weight which it's safe to say he is eating healthy as I am just double the portions! I wish my body worked like that!

Here's to loosing some weight and just maybe I will treat myself to a new bathing suit since it is the opening day of pool season!

Sweet 'n Sticky Sesame Chicken

The next reciepe I tried was the Sweet n' Sticky Sesame Chicken.  I love Sesame Chicken as any Chinese restraunt. I also know it is full of fat and chalked with many PP values.  This was just as delicious.  Here are the details:

Ingredients

10 oz. raw boneless skinless lean chicken breast, chopped into bite-sized pieces 

1/8 tsp. salt 
1/8 tsp. black pepper 
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original) 
1/4 cup whole-wheat flour, divided 
1/4 cup fat-free chicken broth 
1 tbsp. cornstarch 
2 tbsp. sugar-free pancake syrup 
2 tbsp. seasoned rice vinegar 
1 tbsp. ketchup 
1/2 tbsp. lite/low-sodium soy sauce 
1/2 tsp. sesame oil 
1/2 tsp. crushed garlic 
1 tsp. sesame seeds 
2 tbsp. thinly sliced scallions 
Optional: crushed red pepper  


Instructions: 
 Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray and set aside.


Place chicken in a bowl, season with salt and pepper, and cover with egg substitute. Toss to coat and set aside.

Place 2 tbsp. flour in another bowl. Use a fork to transfer half of the chicken to the flour bowl, allowing excess egg substitute to drain back into the egg bowl. Thoroughly coat chicken with flour, and then transfer to the baking sheet. Wipe the bowl clean, and then repeat with remaining flour and chicken.

Bake chicken in the oven until fully cooked, about 10 minutes.

Meanwhile, to make the sauce, combine broth with cornstarch in a small nonstick pot and stir to dissolve. Add syrup, vinegar, ketchup, soy sauce, sesame oil, and garlic. Mix well and bring to medium heat on the stove. Stirring often, cook until thick enough to coat a spoon, 2 - 3 minutes. Set aside.

Place cooked chicken in a bowl, top with sauce, and toss to coat. Sprinkle with sesame seeds and scallions. 


Total: 7 PP for the Chicken

I paired Brown Fried Rice.  
Total: 5 PP

Sassy Saucy Ribwich


As mentioned in yesterday's post I found some awesome recipes. The first one we tried was the Sassy Saucy Ribwich. I paired this with Alexia Yukon Gold French Fries. This was a great meal after a fabulous day at the beach! Here are the details:

Ingredients:

1 Morningstar Farms Hickory BBQ Riblet(found in the freezer aisle)


3 hamburger dill pickle chips
3 thin slices onion

Instructions:

Prepare Riblet according to package directions. Meanwhile, split roll in half and lightly toast.

Stack Riblet, pickles, and onion on the bottom half of the roll. Finish it off with the top half.


TOTAL: 9 PP for sandwich

Prepare Fries according to the package.


Total: 3 PP for fries

If you have WW online tools you might have noticed that sometimes 'Hungry Girl' blogs or awesome reciepes. One day after surfing the Ineterweb, I came accross her fabulous website.  Check it out here: Hungry Girl !!

I have made 3 of the 4 and they have been delicious.  I had always known about Hungry Girl but this is my first time exploring the website. It is nice they compare to the more fattening foods that we are used to eating:)

Skinny Saturday!!

Today was another skinny Saturday here at the Roberts house hold.  I went in for my weekly weigh in hoping on loosing some poundage. I looked at my activity points and I earned quite a bit this week. I had lost a little bit last week and so I assumed that I would see a big number this week.  I go dressed and went to the meeting.  I got on the scale and to much of my surprise and delight, I lost:

2.6 lbs!

I was so excited as this was a big number to loose but I was also excited because this meant I have lost 10% of my weight since I first weighed in January 9, 2011. It was exciting and a great feeling that my hard work is paying off.  I am going to keep doing what I am doing and keep living the dream:) Have a great weekend and a fabulous week!

Meatball Sub :>

Tonight I didn't feel up to cooking and then I remembered the LEAN meatballs that we picked up last week at HEB. We decided that we would make MEATBALL Subs!!! Here are the details:

5 meatballs- 3 PP


Tomato Sauce- 0PP
I added 2 cloves of garlic and some italian seasoning and heated the meatballs in a pan on the stove.


Hot dog bun- 3 PP





Kraft Swiss Cheese- 1 PP




Voila! Pretty dang good and only 20 minutes of cooking:)



Alexia Yukon Gold Fries- 3 oz for 3 PP




I decided to also add some grated Romano Cheese on top. 1/2 tsp was more than enough and it was 00 PP.

Perfect 0 PP snack!

I love apples and cinnamon! One day after having leftover apples from making an apple tart I decided to sprinkle 1 tsp of cinnamon and have it as my bed time treat! The best part of this is it is only 0 points! Here are the details:
Ingredients
1 apple cored and sliced onto pieces
1 tsp of cinnamon
Total=0 PP

Chicken Spagetti-De-FREAKEN-LICOUS!!!!!!

The other day I saw on my FABULOUS WW leader's Facebook wall an awesome recipe!  It looked like it would perfect for a week night dinner...or just a meal in general BECAUSE IT WAS SO EASY! We cooked it tonight and I sure was right!  Here are the details:

Ingredients



8 oz. cooked diced chicken
3 cups cooked spaghetti
5 oz. lite Velveeta, cubed and melted
1 can FF cream mushroom soup
 1/2 c. chopped onion
1/2 bell pepper
Option Rotel for spice


Instructions
mix ingredients, pour into 8x11 pan. heat thoroughly for 15 minutes @ 350* Tip: mix Velveeta with soup and heat, cheese will melt without sticking. Makes 6 servings

It was very easy to make and I did it while working out! (My husband did do alot of the prep work...he is a doll!:)

TOTAL: 6 PP per serving

Four Cheese Macaroni

Tonight we had bacon wrapped filet mignon and Four Cheese Macaroni! It was loaded with blue, cheddar, Colby and parmesan cheese! Here are the details:

It was great. Cut into 9 pieces and each piece is 8 PP! SOOOOOOOO WORTH IT. Considering most mac and cheese it worth 6-8 PP for a 1 cup this is the bigggggg money maker:) It is cheesy and doesn't taste "healthy".  Try this recipe with a low PP meat and it makes for a great dinner!

Cooking for Two

When I was cooking for ONE while being on WW, I always thought about how difficult it was and couldn't wait until I was cooking for 2 or more! Now i have a wonderful husband that loves to eat but it is still difficult.  Sometimes, halving the recipe works but most of the time it is best to leave the recipe the way it is.

For example, tonight we cooking Four Cheese Maccaroni that has 9 servings. I looked at cutting it in half it became VERY difficult.  These are the times I wish we had a children to cook for. But then when I go to HEB to get supplies and the children running all over the place I realize I don't mind having AWESOME leftovers instead of cooking for my wonderful little family:) As a great friend recently stated " In due time all great things will come"! It's the Little Things

Yesterday was my weekly weigh in also known as Skinny Saturday.  This past week stuck to the program and was pretty good. I didn't get in my usual workouts but I did get in some activity so i did the best I could.  I got on the scale, took a deep breath and closed my eyes: I lost

.4 pounds! 

I know this might not seem like a lot and it isn't BUT it is something and that is awesome!  Looking back at the past 3 weeks I have lost 5.6 in 3 weeks! I am very satisfied and happy with the numbers that the scale is telling more. Even better I am EXTREMELY HAPPY with what the mirror and body are telling me! I am going to keep on keeping on and doing what i have been doing because it has been working!

Chicken Black Bean and Rice

Today I decided to make this reciepe that I found on Yahoo's home page this past week. YOU can find it here: YUMMY! This was very simple to make and the only thing that took time was cooking the casserole.  I inputed this into the WW reciepe builder and make it 8 servings ( 1 servings for each piece of chicken) and 1/2 cup of rice mixture and it is 6 PP or serving. Here are the details :

Ingredients

  • 1/4 cup all-purpose flour
  • 1-1/2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-1/2 to 3 pounds meaty chicken pieces (breast halves, thighs, and drumsticks)
  • 2 tablespoons cooking oil
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14.5-ounce can diced tomatoes with onion and green pepper, undrained
  • 1 cup tomato juice
  • 1 cup frozen whole kernel corn
  • 2/3 cup long grain rice
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 2 cloves garlic, minced
Instructions

  1. In a large resealable plastic bag combine flour, 1 teaspoon of the chili powder, the salt, and pepper. Add chicken pieces, half at a time. Seal bag; shake to coat.
  2. In a very large skillet brown chicken on all sides in hot oil over medium heat about 10 mintues, turning occasionally. Remove chicken from skillet and set aside; discard drippings. Add beans, undrained tomatoes, tomato juice, corn, uncooked rice, the remaining 1/2 teaspoon chili powder, the cayenne pepper, and garlic to the skillet. Bring to boiling. Transfer rice mixture to a 13x9x2-inch baking dish or 3-quart rectangular casserole. Arrange chicken pieces on top of rice mixture.



  1. Bake, covered, in a 375 degrees F oven for 45 to 50 minutes or until chicken is no longer pink (170 degrees F for breasts; 180 degrees F for thighs and drumsticks) and rice is tender. Makes 8 servings.
DARYL AND I LOVED IT! This recipe is highly recommended by OUR familY!

This casserole was loaded with flavor and might be even less PP value.  But when I inputted the recipe into the WW Recipe builder this is what it gave me:) I am still working on it ....until then

Strawberry Skinny Girl Margarita!!!!

Refreshing frozen beverages are almost loaded with points plus! A couple of weeks ago I posted a great recipe for a low PP refreshing beverage!

Today I picked up a bottle of Skinny Girl Margarita mix at Specs. I had been wanting to try this for a while but not being being much of a margarita drinker I wasn't sure i would like it! But like everything else I knew it wouldn't hurt to give it a try. So I picked up this:




I used 4.5 oz, 1 cup of ice &'a handful of strawberries and blended! This awesome drink come out to 0 PP  Thanks for all the awesome comments! Y'all are totally right about the PP! I still say that 1.5 PP is pretty freaking awesome for this drink!  I figured out I could have 3 for one point!!





This was so great, refreshing and I got a little buzz from one drink:). This was too good not to share!

Friday night with my boo

Tonight is a low key with my honey lover. We like to have low- key Friday nights and tonight is no exception. We have a busy Saturday which does includes my weekly weigh in! Tonight after I got my quick work out in I made Parmesan Chicken Tenders which I wrote about here!  They were DE-FREAKEN-LICOUS!!

I also figured decided that  Miller Lite would be my drink of choice because it is only 3 points. As much as I love Bud Select 55 it is basically like drinking water and so I decided to use my points for alcohol more effectively.

 Now we are watching 'Due Date' which seems to be pretty funny! Here is to a Skinny Saturday!

Planning to Plan

Planning can be a big part of learning to a healthier lifestyle. Every Friday I sit down and make our dinner menu for the week. I write out each day. I make a small list of what ingredients we need to buy. It looks like this:




I see what we are eating for the week and it gives me time to plan out the rest of my meals. I then add my menu items to my grocery list:





Other things I add to my list are items that I am going to need and want for the week. This has really been beneficial when we go grocery shopping as it helps us stay on track. This might seem like alot of work but it isn't really at all and once you get used to it it's nothing. Planning is key to being successful to anything!

Are you Eyes bigger than your Stomach?!?!



Have your eyes ever been bigger than your stomach? This happens ALOT to my husband and occasionally to me. When I am cooking dinner after a quick work out, my eyes become A LOT BIGGER than my stomach. Having the control over those cravings is something you have to control or make sure you count those points! For example:

Last night when I was preparing the Cheesy Chicken Enchiladas, I thought to myself: " I am going to eat 3 of these babies!"After careful consideration I thought that I would eat 2 and if I was really truly hungry then I would eat another one. Once I sat down and ate the two I had served myself it was more than plenty!

When we are making or ordering something to eat we often let our eyes get the best of us and it is really important to listen to our stomachs and brains:) Has this ever happened to you?

Favorite FroZen treat

I discovered these awesome little treats about 3 weeks ago.  I was on a mission to find something sweet, cold and low in points. While 4 points might not be exactly 'low', this is a perfect night cap or something delightful to spend some remaining points left over from the day.  My husband gets the snickers ice cream bars. They look very similar except it is SMALLER and 1 MORE PP!! Here are the details:

Me Gusta Chicken Enchiladas

On of the first posts I wrote about was Cheesy Chicken
Enchiladas.

I usually eat 2 servings which comes out to 9 PP ( I love when it comes out that way!). Tonight we had some ranchero pinto beans! Those were 1/2 a cup for 3 PP.

Parmesan Mashed Potatoes

In addition to the chicken fried steak described in my next post, we had Parmesan Mashed Potatoes. I loved being able to use one of my most prized possession to mash these: my kitchen aid mixer! Here are the deatils:

Chicken Fried Steak...oh la la!

Last night WE cooked one of Daryl and my favorite meals...Chicken Fried Steak! This recipe is so delicious! The portion size per serving might 'look' small but it is just enough. We had them with mased potatoes which I will post next. Here are the details:

I have been cooking this for quite a while a found new techniques to cooking this a little easier. The instructions say to cook the bacon and then 'fry' the meat in the grease. It can get a little messy so my amazing coworker suggested broiling them instead! This not only makes the clean up easier it makes the chicken fried steak taste better! We have been cooking the bacon in the microwave and then chopping it up. This recipe is top notch and one of our favorites!

3 oz of meat and 1/4 cup of gravy= 8 PP


Our Dinner Last night:
Chicken Fried Steak: 8 PP
Parmesan Mashed Potatoes: 4 PP ( I had 1 cup becuase I needed to use 1 PP for the day:)
Total: 12 PP

The family that eats together...stays together!

My husband loves food. He comes from a family of FABULOUS cooks. So when I decided to incorporate Weight Watchers, I knew getting his buy in was just as important as sticking with the program.  That is the reason I try so many different recipes to show him how great being Healthy can be.  I am so lucky he has embraced this change with me. We are even eating the same meals! This was our lunch today:

Cheeseburger on Bagel thin: 8 PP
White Cheddar Cheetos Puffs- 28 for 3 PP
Cantaloupe: 0 PP
TOTAL: 11 PP

TIRED

As I have gotten older I have realized the importance of sleep. On a week night I am normally in bed by 8:30-9 and asleep by 10:00.  I get up about 6:45 in the morning 8 hours and 45 minutes of sleep. This might seem lame but last night I went to sleep about 11:00 and today I was exhausted. I will probably be dead asleep by 9:00!

Gobble Gobble...Thanksgiving in March!

On Sunday I like to make a meal that takes a little while to cook since I have a little extra time to make dinner. So yesterday I fixed: Roasted Turkey Breast with Garlic and Herbs and Whipped Sweet Potatoes with Vanilla Yogurt and Granola Topping! Here are the details:

Roasted Turkey Breast with Garlic and Herbs- 5 PP:

Overall, it was not hard to make at all but I did need alot of time for it to cook.  It turned out great especially for 9 points for dinner!

COLD Green Tea

My wonderfully fabulous coworker Monica, whom I mentioned in a previous post, introduced me to Crystal Light- Green Tea: Peach and Mango on Friday. It is soooo good.  I am glad she told me about this as I was starting to wonder what I was going to drink when it started getting really hot! There is no way I can drink HOT tea when its 95 degrees outside! I tried it out on Friday on I have had about twelve 12 oz glasses since Friday! It really has helped curb any cravings I might have but I have been going ot the little girls room A LOT! WHo wouldn't though when you are drinking about 60 oz of water a day! PIck soe up at a store near you!

A New Discovery!

Last week I posted an awesome breakfast Taquito reciepe.  I made it again today and changed up one tiny thing. My FABULOUS coworker (who is also doing WW) brought me this Lavash that she learned about in her WW meeting.  I was able to make a breakfast Burrito! It was VERY VERY FILLING.  We ate about 9:15 and I wasn't even hungry until 1:00.  Here are the details:

1/2 cup of Egg Beaters and egg white- 2PP:

2/3 cup of Jimmy Dean Sausage- 2 PP:


1 slice of Kraft FF cheese- 1 PP:


Lavash- 3 PP:
IT is the size of the Burrito Tortillas that ou can get for 5 PP! 

For 8 PP you get this baby:

Try this for breakfast some day. It does not take long to make!
