Skinny Saturday on the Scale!

This past Saturday, I got back into the routine of getting back on the scale after a week of eating out! EEK!! I wasn't sure how things were going to pan out but I put my big  medium girl patties on and headed out the WW meeting. I had some things to do before our big 1st wedding anniversary weekend could begin therefore I couldn't stay for the meeting. But that was OK because I lost:

1.2 pounds!!!!!  

I was so excited and happy but just hope that the eating out doesn't catch up to me (Side bar: I did make kinda good choices:) OH well...live and enjoy for today! Am I right!!  This brings my total loss to 28.4 pounds! I still can't believe but I am inching towards my goal!

AND I REALIZED THAT IN THE PAST 5 WEEKS, MY HUSBAND AND I HAVE ONLY EATEN THE SAME DINNER TWICE! I can't believe we have really eaten something different each night in 35 days! Why only 20 posts about the recipes....well I am a little behind and will slowly get back to point! Until then....

Smart Ones

I don't usually eat the frozen smart ones.  There are some that are really good and a great clutch when you need something delicious and fast.  I recently found one that I absolutely love! They are the Smart One's mini cheeseburgers! It is great to get that hamburger fix and a great lunch when coupled with the new WW Popped BBQ chips!   The entire meal is only 12 PP. Next time you are in the grocery store

Day 19: Crispy Nacho Chicken

I love love love easy to cook meals on Thursdays! It encourages me to cook dinner instead of going out to eat since isn't going to be hard since i planned ahead! As I have mentioned before, Hungry Girl has a section of the book dedicated to the "trios".  When I am making my list for the week I tend to plan these meals towards the end of the week:)   I made this "nacho chicken" and it was surprisingly easy and combines some our Mexican food favorites: chips and salsa! Here is the skinny:

Ingredients
5 oz chicken breast

1/4 cup of salsa

8 baked tortilla chips

Instructions

Preheat oven to 350 degrees

Place the tortilla chips in ziplock bags and smash into little pieces

Take salsa and pour on top of chicken

Put the tortilla chips on top of the salsa and use a spoon to press the tortilla chips into the chicken

Bake in Oven for about 25-30 minutes and Enjoy! OLE!

PLaying Catch up

I haven't written too much in about a week and I am sorry!! I need to find a better way of uploading pictures on the actual blog site so any suggestions would be fabulous!!!??!?!? 

I have not fallen off the train as I am still on the the WW wagon of success! ( I have not weighed in about a week due to having to work this Saturday.) I am a tad worried about weighing in this week but I do feel like my clothes are getting a little looser! We will see. I have been eating out a little more but making wise choices.  I read in a article by Hungry Girl and she stated that she eats well 80% of the time and 20% of the time she gives herself a break.  I would say that I have become about 90%-10%...which isn't too bad but before I was doing about 97% good and 3% bad...and that was a for sure success. I am not done loosing weight. I calculated that have about 23 pounds to get to my goal weight.  I haven't been that weight since high school, IF I even weight it in High School.  

Please bear with me as I am going to begin putting the yummy and fabulous recipes that I have been cooking the past couple of weeks.

Skinny Saturday....ummm.....welll...kinda...sorta...Things are going to be ok:)

When I first started my blog I said I would talk about the good, the bad and the ugly...well here is goes:

This past week was a.....challenge to say the least.  I was extremely busy an only worked out 2 times and then there was Cinco De Mayo! I learned a couple things about myself that I will carry over into my healthy eating lifestyle.  This is what my WW tracking looked like when I went to weigh in on Saturday morning:

I didn't even know that points could even go into the negative!! But I WAS PROUD that I did track the good, the bad and the ugly.  I even told my husband that if I gained any weight he had my permission to comfort me with the knowledge that I didn't make the BEST food choices this week: did I really need to get the enchilada AND the toastada AND the taco? DId I need the rice AND the charro beans ( I did get charro instead of refried...Bravo sticker anyone??).  But I didn't give up hope totally....

I even wore my extra "skinny" clothes (whatever that means) and went to the WW meeting! (It did occur to me that I maybe could skip out on the meeting but what good would that do!)  I stepped on the scale, braced myself for the worst and the sweet lady whispered: 

You stayed the same this week...
What! Come AGAIN!? Can you say it louder?!

While this isn't as good as losing weight it is perfectly fine with me and I am proud to say that this was the first time in 16 weeks that I did not lose weight and I survived! Just makes me realize there is no need to eat "horrible" when the good food choices are equally delicious and don't give me heart burn:) 

Here is to a new week of eating good and living healthy...who needs you full of fat mexican food or take out pizza.  I have some weight to lose and I am eating good:)

Day 18: Exploding Chicken Taquitos

Who hasn't been to a party and had those fabulous full of flavor fat! But of course we eat them and love them. We go to the store and buy some and indulge some more:) Well I have a solution for you! I made these babies fora  Cinco de Mayo party at my office. They were a big hit!


Ingredients:
8 small (6-inch) yellow corn tortillas
9 oz of chicken breast shredded
1/2 cup salsa
1/3 cup shredded fat-free cheddar cheese
1/4 tsp. dry taco seasoning mix
Optional: red enchilada sauce, additional salsa, fat-free sour cream, for dipping


Directions:
Preheat oven to 375 degrees.

In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.

Remove chicken mixture from the fridge, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.

Prepare a baking sheet by spraying with nonstick spray, and set it aside.

Dampen two paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.

Take one tortilla (keep the rest between the paper towels), spray both sides lightly with nonstick spray, and lay it flat on a clean dry surface. Spoon about 2 heaping tbsp. of filling onto the tortilla. Spread it evenly across the entire surface, and roll tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.

Bake for 14 - 16 minutes, until crispy. Allow taquitos to cool for 5 minutes. If you like, dunk in enchilada sauce, salsa, or sour cream!

Day 17: Crock-Pot Cinna-Apples 'n Oats

Happy Cinco de Mayo! Last night while I was preparing another recipe (which I will post later) I had some time to kill and started looking through the cookbook. I came across a recipe that I had been wanting to try but never thought I had the time to prepare this. I also was waiting for when I had guests but I decided what the heck and started looking for the ingredients:) Turns out this was not hard to make and made it in about 15 minutes and woke up to a FABULOUS smelling house. You get a HUGE portion serving.  Here is the skinny: 




Ingredients:
8 cups chopped Fuji apples (about 6 apples)
2 tbsp. brown sugar (not packed), divided
1 1/2 tsp. cinnamon, divided
1 1/2 cups old-fashioned oats
1 cup light vanilla soymilk
1/3 cup sugar-free pancake syrup
1/2 tsp. salt
2 tbsp. light whipped butter or light buttery spread


Directions:
In a large bowl, mix apples with 1 tbsp. brown sugar and 1/2 tsp. cinnamon. Stir to coat apples well. Transfer to the crock pot.

In the empty bowl, combine oats, soymilk, 1 tbsp. brown sugar, 1 tsp. cinnamon, syrup, and salt. (All remaining ingredients except butter.) Add 1 cup water and mix well.

Add oat mixture to the crock pot, and gently stir. Cover and cook on high for 3 hours or on low for 7 hours.

Add butter and mix well. (Do NOT forget this step. Stick a Post-it to your timer if you have to!)

Day 16: Buffalo Chicken Wing Macaroni and Cheese



    As mentioned in various posts, one of my favorite foods is Buffalo Wings:) I found this recipe for Buffalo Chicken wing Macaroni and Cheese! Here are the details: 
      Ingredients 
      4 1/2 ounces (about 1 cup) uncooked elbow macaroni with at least 2g fiber per 2-ounce serving 
      2 stalks celery, chopped 2 medium carrots, chopped 
      1 small onion, chopped 
      8 ounces cooked and shredded skinless lean chicken breast 1 teaspoon chopped garlic 1
      /4 cup Frank's RedHot Original Cayenne Pepper Sauce, divided
      1/2 cup fat-free sour cream
      2 wedges The Laughing Cow Light Creamy Swiss cheese 
      2 teaspoons yellow mustard 
      1 1/2 tablespoons reduced-fat Parmesan-style grated topping 
      1 tablespoon chopped fresh parsley


    Instructions
    Preheat oven to 350 degrees.

    Cook pasta al dente in a medium-large pot. (Refer to package instructions for exact time.) Drain and set aside.

    Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add celery, carrots, and onion. Stirring occasionally, cook until veggies have slightly softened, about 5 minutes.

    Add 
    chicken, garlic, and 3 tablespoons hot sauce to the skillet. Mix thoroughly and set aside.

    In a microwave-safe bowl, combine sour cream, cheese wedges, mustard, and remaining 1 tablespoon hot sauce. Mix well and heat in the microwave for 30 seconds.

    Spray an 8-inch by 8-inch baking pan with nonstick spray. Evenly place half of the pasta into the pan. Evenly top with chicken-veggie mixture followed by the remaining pasta.

    Add the sour cream mixture to the pan in an even layer. Sprinkle with Parm-style topping and parsley.

    Bake in the oven until hot and bubbly, about 30 minutes.

    Serve and enjoy!

    Makes 4 servings

    1 serving: 5 PP






    While this was good it was nothing like eating WINGS or MAC and CHeese but it was the perfect substitute! I have learned that when dealing with Mac and Cheese the likelihood of it tasting healthy is pretty high.  This was one of the first Hungry Girl recipes that I felt was "healthy". My wonderful husband loved it but at this point (we are about to hit our 1 year anniversary) he has learned to always say he likes what i make:) I liked this recipe but did not LOVE it. You win some and loose some however, I would say this was a tie:)
